On February 5, 2026, the opening event of the federal project "Very large cuisine! Regional.Organic.Regensburg." took place in the Eckert schools in Regenstauf. instead of. Around 100 participants from the areas of agriculture, processing, gastronomy, trade and logistics took part in this important event. The aim of the project is to strengthen regional and bioregional food in out-of-home catering, which affects canteens, schools, clinics and catering establishments.

In her speech, District Administrator Tanja Schweiger emphasized the crucial role of regional value chains for climate protection and economic stability. Mayor Ludwig Artinger emphasized the importance of Regensburg as a location for out-of-home catering and thereby supported the central concerns of the project.

Project goals and development of new products

A central concern of the project is the development of new regional products and the improvement of logistics structures. There are also plans to intensify cooperation along the food chain. The successful development of the “Regensburger organic fries” has already been presented as a new product. In addition, other products are in development, including potato processing offerings as well as organic broths and sauces.

The project also provides product-specific value chain consulting to support the partners in product development. The focus is on practical solutions that include both reducing food waste and optimizing logistics. The use of food scanners to analyze the amount of waste in out-of-home catering facilities plays a central role here.

Networking and digital platform

An important measure to support regional value creation is the creation of a digital B2B platform. This is intended to enable regional providers and customers to network. Twelve facilities from the city and district will also receive individual coaching and support, with the costs of organic certification of the kitchens being covered.

The project cooperates closely with the AELF Regensburg-Schwandorf for BioRegio coaching in order to further strengthen the regional value chains. During the event, participants had the opportunity to exchange ideas and network about challenges and opportunities in regional value creation.

The entire project is 100% funded by the Federal Ministry of Agriculture, Food and Community, which underlines the high expectations of the positive impact on the region.

This initiative is not only a step towards more sustainable out-of-home catering, but also a significant approach to strengthening the regional economy.
